3 compartment sink sanitizer solution initially tested to be low (50 ppm) in bleach concentration.
corrective action - operator made a new solution measured at 200 ppm.
recommendation - double the amount of chlorine and water to allow full immersion of wares.

All handsink & washroom supplied with hot & cold running water, liquid soap, paper towel
Freezer temperature at -18 C or below
Bleach spray bottle measured at 200 ppm

Fridge initially observed at 7C
-operator states the temperature rises after lunch rush
-temperature later brought down to 5C

Note: Everything that goes into the dishwashing sink need to go through 3 manual dishwashing process: wash, rinse, sanitize.Ensure toys and other instruments are sanitized.
