Observation (CORRECTED DURING INSPECTION): An insert of raw chicken was stored next to an insert of cooked chicken. The raw chicken insert was covered.
Corrective Action(s): As previously discussed, cooked chicken should be stored above raw chicken, or at a minimum the cooked chicken insert should be covered to prevent any accidental dripping from raw chicken juices.

Comments

- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels
- Quats sanitizer buckets detected to have 200 ppm Quats
- All coolers were maintaining temperatures of 4C or colder. Garlic spread was held in the prep cooler at time of inspection - good.
- All freezers were maintaining temperatures of -18C or colder
- Hot-held food items were measured at above 60C
- Accurate thermometers available. Temperature records well maintained and up to date.
- Equipment maintained in sanitary conditions.
- Grease trap is due for servicing this month. OK.
- Dishwasher registered 50 ppm chlorine residual at the dish surface, detected after rinse cycle. Test strips for chlorine and Quats available for monitoring sanitizer concentrations.
- Dry storage area and mop sink area satisfactory.
- General sanitation satisfactory.
- Pest control in place, no signs of pest activity noted at time of inspection.
