Observation (CORRECTED DURING INSPECTION): Sanitizer solution (QUATS) used for wiping cloths is at a concentration of 50-100 ppm. Ensure that the sanitizer solution (QUATS) in buckets are changed regularly to maintain a concentration of 200 ppm.

Comments

All refrigeration units (eg. walk-in refrigerator, stand-up refrigerator, etc) temperatures are less than 4C.
All Freezer temperatures are less than 18C.
Temperature logs are available and all fridges and freezers have thermometers.
No hot holding at the time of inspection.
Sanitizer solution (QUATS) at the main dispenser is at a concentration of 200 ppm.
Dishwasher (high temperature) temperature is 71.9C at the plate surface which meets the requirement of 71C at the plate surface.
All handsinks are fully stocked with paper towels, soap, and warm water.
Food items are stored 6" off the ground and food are stored in food grade containers with lids.
Foods are from approved sources.
Chemicals are stored in a cabinet and away from food items.
Staff have good hand hygiene and as well, hair control in place with hairnets.
Food Safety Plan is available and Sanitation Plan is available.
Food Safe trained staff on-site.
No signs of pests/rodents at the time of inspection.
Overall sanitation of premises is satisfactory.
