- Freezer at -13 degrees C. Note: Unit appears to be in defrost cycle.
- Hot holding (rice) at 60 degrees C or more.
- Thermometers available for cold holding units. Probe thermometer on site.
- No raw meats. Food is protected from potential contamination.
- Hand sinks (kitchen, washroom) are accessible and supplied with hot and cold running water, liquid soap, and paper towels.
- Three compartment sink supplied with hot and cold running water, and three sink plugs. Bleach water sanitizer in third compartment measured 100 ppm chlorine.
- Bleach water sanitizer also available in bucket with wiping cloths (100 ppm chlorine).
- Utensils/equipment stored in clean condition.
- No signs of pest activity observed.
