Observation: Lots of hard-to-reach spaces (under and behind equipment) are very dirty and need a thorough cleaning. Noted - behind chest freezers, under grill. Clean.

No sign of pests.
All fridges are < 4 degrees Celsius.

Ensure that all hot holding units are fully heated before placing foods inside.
