Observation (CORRECTED DURING INSPECTION): 1) A bag of frozen meat was stored on the floor of the walk-in freezer
2) Tomato sauce was stored in an opened can
3) Sugar syrup was in a mouldy container.
Corrective Action(s): 1) Ensure all foods are stored off the floor and protected from potential contamination. Bag of meat was placed on the shelving area at the time of inspection.
2) Once canned items are opened, ensure the contents are transferred to a food grade containers.
3) Ensure all foods are stored in clean containers to prevent potential contamination of foods. Container and syrup were discarded at the time of inspection.

Observation: Rodents droppings were found in the back area of the kitchen.
Corrective Action(s): Clean rodent droppings and sanitize affected areas. Monitor for future pest activity. Contact professional pest control services as needed.

Observation (CORRECTED DURING INSPECTION): Front sweets cooler was between 6C to 8C.
Corrective Action(s): Cold potentially hazardous foods must be stored at or below 4C to prevent the growth of pathogens and or the formation of toxins. Cooler was adjusted to 4C at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Spray bottle containing blue cleaner was labelled bleach.
Corrective Action(s): Ensure all containers are properly labelled to prevent accidental mixing and or misuse of chemicals.

-Prep cooler was at 4C (top and bottom).
-Upright cooler was at 4C.
-Chest freezer was at -22C.
-Potentially hazardous sauces properly cooled and were less than 4C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Hanwdash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottle tested at 100ppm.
-General sanitation good at the time of inspection.
-Washroom clean and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Operator FOODSAFE Level 1 valid until December 4, 2020.
