Observation (CORRECTED DURING INSPECTION): Whole fish observed wrapped in plastic, sitting at dry storage area beside the chest freezers at room temperature. Operator indicated that the fish was left there for > 2 hrs.
Correction: Discard the fish, ensure the fish is held below 4 deg. C and not be sitting at room temperature for more than 2 hours.

Observation: 1. Low temperature dishwasher tested at < 50 ppm chlorine at plate level
2. Wiping cloths observed to be lying on racks and work/preparation table after usage.
3. Handles to sliding door coolers and knives observed to be wrapped in masking tape.
Correction: 1. Contact technician to repair dishwasher, ensure dishes are sanitized at minimum 50 ppm chlorine in dishwasher
2. Ensure wiping cloths are put in sanitizer bucket after use to maintain sanitary conditions
3. Replace the knives and handles as they are not cleanable surfaces, have to be smooth and cleanable services.

-No sign of pest activities observed at time of inspection
-Manager have FoodSafe training
