302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): - High temperature dishwasher was not turned on and not in use at the time of the inspection. Staff reported dishes are washed and sanitized in the two compartment sink and dishwasher is not being used. Staff were aware of proper dishwashing procedures/steps; however, several dishes were noted to only be partially immersed in sanitizer solution as sink was overfilled with dishes. Additionally on drying rack/shelf, wet dishes (stainless inserts) were noted to be stacked while wet.
Corrective Action(s): - Use high temperature dishwasher to wash and sanitize dishes. Approval of food service establishment was based on use of dishwasher and not manual dishwashing.
- Corrective action taken at time of the inspection: Dishwasher was turned on at time of inspection and used for dishes once heated.

Observation (CORRECTED DURING INSPECTION): - No liquid soap in washroom designated for staff use
Corrective Action(s): - Supply liquid soap to staff washroom. Ensure liquid soap and paper towel (or air dryer) are always present in washroom for handwashing. Hands are to washed in washroom and upon return to food preparation/service area.
- Corrective action taken: Liquid soap (in squeeze bottle) was supplied to washroom at time of inspection. To be replaced with pump style dispenser.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: - Food debris, grime noted along edge of floor under prep tables, handsinks (front and back)
- Minor amount of mouse droppings present at edge of floor by back prep table (where pearls are made). Appears to be from past issues
Corrective Action(s): - Pull out moveable equipment and scrub edges of floor to remove all grime and debris. Disinfect area with mouse droppings with bleach solution. To be corrected by: 29-Jun-2023

Comments

- Handwashing sinks in food preparation areas were supplied with liquid soap and paper towel
- Coolers were operating at 4C or colder
- Freezer was maintaining product in a frozen state.
- Temperatures of cold holding units are checked and recorded. Records were up to date.
- Time tracking in place for cooked pearls held at room temperature
- High temperature dishwasher (once turned on and heated) was operational and met required sanitizing temperature. Temp at dish surface: 73.6C
- In use wiping cloths were kept in bleach sanitizer solution. Concentration measured 200ppm chlorine.
- Reviewed cleaning and sanitizing requirement for in use pitchers, spoons - to be cleaned and sanitized at least every 4 hours.
- Ice machine appeared clean and maintained
- Foodsafe requirement met at the time of the inspection. Shift Leaders present have completed Foodsafe level 1.
- Public washroom was supplied with liquid soap and air dryer.
- No signs of pest infestation noted at the time of the inspection. Snap traps present for monitoring/control. As noted in violation code 306 (above), a minor amount of mouse droppings were noted in one area which appear to be from past issues. Continue to monitor and if any further rodent activity is noted, notify pest control company for additional service/control measures as applicable.
