Observation (CORRECTED DURING INSPECTION): Found rice being reheated to 35 C then put into rice cooker that was 50 C.
Corrective Action(s): Must reheat food to 74 C then place in a pre-warmed hot holding unit that is 60 C or hotter.
Reheat rice to 74 C and ensure hot holding unit has reached proper temperature before using.

Observation: Found food and grease build up under, and behind cooking equipment, on filters for exhaust system as well as on and under shelves and on plastic storage bins.
Corrective Action(s): A deep clean is required through out the premises, especially in the above noted areas.

- Dishwasher had a final rinse of 50 ppm chlorine
- Glass washer had a final rinse of 12.5 ppm iodine
- No signs of pest activity noted during inspection
- Reminder, submit a floor plan for approval for any renovations that are not replacing existing equipment (i.e. new counter top dishwasher and 2 compartment sink).
