Observation (CORRECTED DURING INSPECTION): Inserts in the sandwich cooler located near the ice machine measured with an internal food temperature of 9C. Bottom section at 4C.
Corrective Action(s): Remove portions of food from inserts and do not over stack inserts with food. When not busy, close the lid to maintain temperature.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Used rice scoop was stored in warm water measured at 20C.
Corrective Action(s): Ice scoop must be stored in ice water or cleaned and sanitized after each use to prevent the growth of pathogens.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Quaternary Ammonium sanitizer measured at over 400 ppm in concentration. 200-400 is required to properly sanitize food contact surfaces.
Corrective Action(s): Staff diluted the food sanitizer to 200-400 ppm. Ensure proper dilution is being followed when making food sanitizer.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Hand washing station was blocked by the sanitizing bucket at the time of inspection. In addition, staffs were not observed to be washing hands.
Corrective Action(s): Staff removed the bucket from the hand washing station. Operator must educate staff on hand washing frequency and procedures.

Observation: Dishwasher is broken and has a "out of service" sign posted on the machine. Operator stated he is in the process of submitting a new floor plan for 3 compartment sink.
Corrective Action(s): Service / replace the dishwasher or submit an application to Fraser Health for the 3 compartment sink change. Email the district Environmental Health Officer required documents. Correct by: Oct 28, 2020.

Comments

Routine inspection:
- Coolers (prep, under the counter, walk-in) maintain at 4C or less.
- Hot potentially hazardous food hot held above 60C.
- Hand washing station provided with hot/cold running water, liquid soap and single use paper towels.
- 2 compartment sink is being used for manual diswashing. Staff was able to demonstrate manual dishwashing.
- Ice machine maintained in sanitary condition.
- Food items stored off the ground and organized.
- No pest activities observed at the time of inspection.
- Covid19 safety plan available on site for review.
- Operator to submit document for the 3 compartment sink proposal. In the meantime, facility will use 2 compartment sink for manual dishwashing. A date must be provided to the Environmental Health Officer for the new installation.
- Email a copy of staff's Foodsafe level 1 certificate or equivalent to the Environmental Health Officer.
