Observation (CORRECTED DURING INSPECTION): Noted various types of saran wrapped mushrooms and cut squash stored in produce cooler at 11C. Operator relocated mushrooms and cut squash to bean sprout cooler unit at time of inspection. He said he will order saran wrap with holes for the mushrooms.
Corrective Action(s): Ensure any cut produce are stored in cooler units at 4C or less. This issue has been noted on previous reports with cut melons. Operator is to ensure mushrooms packaging material contains holes so it does not create an anaerobic condition or keep wrapped/packaged mushrooms in air tight containers stored in cooler unit at 4C or less.

Observation (CORRECTED DURING INSPECTION): No sanitizer detected in spray bottle at warewashing stations.
Corrective Action(s): Ensure spray bottle contains sanitizer solution to be used on food contact surfaces within the processing areas.

Comments

- Premises is a food store that sells produced and does some meat cutting/grinding.
- Walk in cooler unit with dairy and cheese, display case cooler unit with bean sprouts, display case cooler unit with raw meat and display case cooler unit with eggs and tofu all 4C or less. See violation code 205 re: wrapped mushrooms and cut squash.
- Freezers -14C to -18C or less (Ensure all frozen potentially hazardous foods are stored at -18C or less).
- General sanitation satisfactory. No obvious signs of pest activity noted at time of inspection.
- Hand wash stations had soap, paper towel, hot and cold running water. Paper towels were in holders.
- Bleach available on site. 100ppm sanitizer available in buckets. Reminded staff to keep all wiping cloths stored in sanitizer solution when not in use. See violation code 302 re: sanitizer in spray bottle.
- Two sets of drain plugs available for each two compartment sink.
- Meat processing equipment appeared clean at time of inspection. Operator confirmed that they are taken apart and cleaned/sanitized after each use.
- Premises processing/repackaging area has been granted health approval to operate by previous inspector.
- Self closing door on washroom opening into processing area and lights over processing area had sleeves.
- All boxes and bags of foods stored off the ground on pallets.
- Reminded operator to ensure temporary food permit application is submitted within 1 month of hats off day event. Operator confirmed they are interested in providing food to the public.
