Refrigeration temperatures satisfactory. Thermometers available in each unit.
High temperature dishwasher achieved 73.4'C at the plate level after final rinse.
100-200ppm chlorine available in a labelled spray bottle for disinfection of surfaces.
NOTE: Automated QUAT dispenser dispensing 400ppm QUAT. Currently not in use. Repair the dispenser before use.
Ventilation canopy hood professionally cleaned and maintained in sanitary condition.
No evidence of pests in kitchen. General sanitation good.
Back storage space has locked cabinets for vendors.
Professional pest control company contracted for regular visit. Recent report to be emailed/faxed to the health inspector.
