Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. French fry cutter that is used to dice pepper and chop cilantro is kept with visible food debris.
2. Both new and old dough residue were noted in the dough machine.
Correction: Clean and sanitize dough machine and frech fry cutter. Dough machine, especially, require deeper cleaning to remove older residues. Correct this by: immediately.

Dough machine and French fry cutter were adequately cleaned and sanitized.

All foods are in food grade container with tight fitting lids.

Walk in cooler thermometer is replaced.

Bleach sanitizer is available at >200 ppm as per test strip. Test strips available on site.
