Observation (CORRECTED DURING INSPECTION): Cooler is at >4C. tomato sauce and lemon juice probed at 9.6 and 9.4, respectively.
Corrective Action(s): All perishable products must be removed from cooler. Operator will place products into freezer.

Do not store perishable products in cooler until it is able to maintain foods at 4C or below.

Time tracking at sheet is being followed- at time of inspection, tags were not on racks. Corrected during inspection. Ensure that tags and charts are kept up to date. Stickers available.
Temperature logs maintained - ensure corrective actions are taken when fridge is >4C. (i.e. retake temperature in 30 mins to see if temperature is 4C or less. Otherwise, move to freezer and call for service.)
