Observation: Floor tiles still missing in front area and in back area underneath the large dough mixer and bun separating machines.
Corrective Action(s): Operator has said that the two machines are too heavy and that they cannot be placed on tile. However, when the kitchen was first approved, all surfaces were required to be smooth, non porous, and easy to clean. If you are unable to place the floor tiles underneath these machines, find a different solution such that the area around them is still smooth and easy to clean and will not collect dirt/debris.

Operator has indicated he will be replacing floor tiles in front area.
To be corrected by next routine inspection.

Sanitation in dough making area has improved, still a few cobwebs in between proofer and ovens. Continually clean and vacuum your kitchen area.
Liquid soap available at 3 compartment sink to wash hands.
Ensure all foods displayed in front area are protected (either in plastic bags or by a sneeze guard)
