Observation:
Containers of food (carrots, lemons, cooked onions & mushrooms, etc.), in the walk-in-cooler were not covered. Debris or bacteria could fall into the food and contaminate it.
Corrective Action(s):
Covered all food and/or food containers with a lid, saran wrap, or aluminum foil.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Food debris, stains, grease & mould accumulated in the following areas, this will attract pests:
1) Wire racks in the walk-in-cooler.
2) Exterior surfaces of beer lines in the walk-in-cooler.
3) Exterior surfaces of food containers.
4) Floor beneath the wire racks in the walk-in-cooler.
5) The downstairs staff washroom floor is dirty. This was mentioned in the previous inspection.
Corrective Action(s):
All mentioned areas require to be washed with hot water & soap, and sanitized. Increase the frequency at which these areas are cleaned to prevent build up. The lowest rack, of the wire shelves in the walk-in-cooler, shall be raised 6" off the floor so that staff can get a broom under the rack to sweep up spilled food on a daily basis. Otherwise, staff will need to move the whole rack to clean underneath each day.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
The following areas were found to be damaged and are no longer cleanable of safe as bacteria will hide in the cracks, and/or pieces of equipment may fall into food:
1) Plastic food inserts/containers and their lids are cracked and chipped.
2) Grey colored bus bins are cracked and chipped.
3) The handle on the ice bin, below the pop dispensing machine, is broken and covered in tape.
4) The tabletop convection oven, to make cheese breads, has a damaged door seal.
Corrective Action(s):
Discard all damaged, cracked or chipped items and puchase new ones.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -19C or colder; hot holding units above 60C; thermometers present; and temperatures monitored daily but not recorded.
- High temperature dishwasher had rinse cycle temperature of 72.9C at the plate's surface as per max/min thermometer.
- Cloth buckets with sanitizer had [Cl1] between 100ppm-200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; majority of the food was covered; foods stored in groups to prevent cross contamination; and foods stored off the floor on racks, shelves, or pallets.
- No expired foods in use. FIFO rules followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- No signs of pests.
- FoodSafe certified staff present. BE ADVISED: Certificates that were obtained prior to 2013 or do NOT have an expiration date on them will expire in July 2018. Go to www.foodsafe.ca to register for the online refresher course.

**Structural improvements still needed to bring the facility up to health standards. Wooden surfaces that have worn away paint; walls with holes or damaged drywall; and permanently stained surfaces (doors, walls) require to be repaired, resurfaced, and resealed (painted)** Plan to complete these repairs in the next 6-8 months.**
