Observation (CORRECTED DURING INSPECTION): Two trays of fried chicken and a dozen small bags of cheese were stored in the stand-up cooler. The internal food product temperature measured at 15C. The operator stated the stand-up cooler had not been serviced yet.
Corrective Action(s): All the aforementioned food items were discarded. Do not store any potentially hazardous food items in the stand-up cooler until it is able to maintain an ambient air temperature of 4C or less.
