306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) The interior walls and mechanical parts of the ice machine have mould on them. The mould may fall/touch the ice which patrons could ingest it.
2) The ledge below the front windows in the pizza dough area has accumulated flour and dough on it. This will attract pests and is visible to patrons outside.
Corrective Action(s):
1) Clean the interior walls and mechanical parts of the ice machine with hot soapy water, rinse with clean hot water, and then sanitize with hot water and bleach. Ensure to turn the ice machine off first and empty all the ice out.

2) Clean the ledge with hot soapy water to remove all the accumulated food. Increase the frequency this areas is cleaned, as the current frequency is not adequate.

Observation:
Plastic food containers/inserts and their lids were found to have cracks, chips and/or are damaged. This is unsafe as pieces of plastic could fall into food, and bacteria will get into the cracks which can NOT be properly cleaned.
Corrective Action(s):
Inspect all plastic food containers/inserts and their lids for damage. Throw away any damaged items and purchase new ones.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -19C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher rinse cycle was 71C at the plate's surface, as per max/min thermometer.
- Bleach sanitizer in cloth buckets had [Cl2] of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labeled; date coded; stored in groups to prevent cross contamination; and stored 6" off the floor on shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level has improved. Hard to reach areas, and detailed cleaning is being done and maintained, good job. Ensure to address the mentioned areas for more improvement.
- No signs of pests.
- FoodSafe certified staff present.
