Observation: General sanitation in the kitchen needs improvement to remove grease, dust and old food buildup. Heavy grease accumulation observed on the ventilation hood and grease was also observed under the cook line. A professional company is scheduled to clean the ventilation hood this week.
Corrective Action(s): Clean the entire kitchen, including, but not limited to:

-The ventilation hood
-Under the cook line and flooring in hard to reach areas.
-Cooler door handles.
-Countertops and shelving.

A follow up inspection will take place in two weeks.

Observation (CORRECTED DURING INSPECTION): The dishwasher had 0 ppm chlorine during the rinse cycle. The chlorine sanitizer container for the dishwasher was empty and it was replaced with a new one.
Corrective Action(s): Corrected during the inspection. Ensure that this is checked daily.

Comments

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Sanitizer solution had 100 ppm chlorine.
No evidence of pests.
One of the owners had a valid FoodSafe Level 1 certificate during the inspection. It expires in August 2023.
