The dishwasher is still not in working condition. The operator noted that the maintenance person has worked on it but was unable to repair it. The operator is calling a contractor today.
The kitchen is open for 3 hours a day and single use utensils are used to serve breakfast. Ensure to implement proper manual dishwashing with 100ppm chlorine (1teaspoon bleach per 1L water) for warewashing.

The upright fridge measured 15C and the prep cooler measured 10C. The operator noted that he has adjusted for temperature but the temperature failed to drop. The operator is considering replacement of the cooler units. No potentially hazardous foods are stored in these coolers. Frozen foods are stored in the freezer downstairs at -18C.

Follow up inspection will be conducted to ensure that:
- Dishwasher is able to produce at least 50ppm chlorine at plate's surface
- Coolers are able to maintain temperature at or below 4C
- All coolers are equipped with working thermometer
- Chlorine test strip is in place for checking chlorine concentration in the dishwasher
- Temperature log is in place
