Observation: Food residual and debris noted along the cookline, interior of the refrigerator units, including door gaskets, underside of door handles, floor of the walk-in cooler and in the dry storage area.
Corrective Action(s): Clean and sanitize the aforementioned area and maintain in a sanitary condition.

Observation: 1 Rona container used for the storage of broth.
Corrective Action(s): Remove Rona container and only use food-grade container for the storage of food.
All food must be stored using a food-grade container as these containers are designed to be washed and sanitized multiple times and will not leach any harmful substances into food.

Comments

Routine inspection conducted today:
Handwash stations, including the staff washroom, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigerator units were at ≤ 4C.
All freezer units were at ≤ -18C.
Rice was warming in the rice cookers (2 units) - both noted > 60C.
Chlorine sanitizer buckets were available - one in the bar area and one in the kitchen. 200 ppm chlorine residual noted in both containers.
Proper thawing method observed, under running cold water.
Interior of the ice machine and fume hood sanitation satisfactory.
In-use utensils changed out and cleaned every 15 - 30 minutes.
High temperature dish machine was able to reach 72C at the plate level during the rinse cycle.
Please have the machine service as the temperature was unable to reach 71C at the plate level at one point during the inspection. Temperature was able to reach 71C after multiple attempts. Please also invest in a waterproof thermometer in order to verify that it is able to reach 71C at the plate level in order for all dishwares to be properly cleaned and sanitized. Inadequately sanitized dishwares may lead to foodborne illnesses.
