All coolers measured 4C or colder at time of inspection Freezers measured -18C or colder Hot holding was measured above 60C at time of inspection Handsinks were supplied with soap and paper towels 200ppm quats sanitizer available at sink dispenser and in buckets throughout kitchen General sanitation is adequate **Please clean under shelves in dry storage room, especially pasta shelving Dishwasher final rinse temperature measured above 71C at the plate surface - staff are constantly monitoring dishwasher rinse temperature due to drop in temperature after 5-6 racks are washed.
