Observation (CORRECTED DURING INSPECTION): Pieces of cooked chicken breasts at 38C. Operator mentioned that it was cooked and prepared at 8am and was cooling at room temperature for 4 hours. Reviewed with operator the proper cooling process.
Corrective Action(s): Discard the chicken as it was not properly cooled. Cooling from 60C to 20C should be done within 2 hours and from 20C to 4C within 4 hours.

Observation (CORRECTED DURING INSPECTION): Stew was on a hot plate at <60C. Operator indicated that it was boiling earlier and she turned it down. Reviewed with operator the hot-holding temperature requirement is = or >60C.
Corrective Action(s): Operator reheated the stew to above 74C and it was hot holding at = or >60C. Ensure to use a hot plate that is able to maintain required hot-holding temperature consistently.

Observation (CORRECTED DURING INSPECTION): The dishwasher did not meet chemical sanitizing requirement. 0ppm of chlorine detected. Temperature was 43C. There were no sink plugs in two compartment sink.
Corrective Action(s): In the interim, dishes and utensils can be washed and rinsed in the dishwasher. Sanitize the dishes in a large tub of 100ppm chlorine sanitizer for 2 minutes and then air dry. Sanitizer was prepared and tested at 100ppm at time of inspection.

Observation (CORRECTED DURING INSPECTION): No soap present in female bathroom at handwashing sink.

-Some food in the freezer and cooler stored in container without a proper lid.
Corrective Action(s): -Rearrange raw meat so that they are stored separately from the ready to eat foods.
-Provide a lid for food stored in the cold-holding units.

-The floors underneath the food preparation area at the back.
Corrective Action(s): Clean the areas mentioned above.

Observation: Dishwasher not able to meet chemical sanitizing requirement. 0ppm chlorine detected. Temperature was at 43C.
Corrective Action(s): Repair the dishwasher so that 100ppm chlorine is detected at the plate.
