Observation (CORRECTED DURING INSPECTION): Hot water tank (pilot light) had not been turned on yet at time of inspection (morning) as staff had been away from the premises for a few days.
Corrective Action(s): As discussed, hot running water must be available BEFORE you can start operation of your restaurant, not after you've already opened. Operator turned on hot water tank and hot running water was available by end of inspection.

Various domestic coolers and cooler/freezer combination units located throughout premises:
With exception of above mentioned counter top cooler, all other coolers at 4 deg C or less
All freezers (both chest freezers and freezers in the domestic cooler/freezer unit) at -18 deg C or less
No hot holding at time of inspection
High temperature dishwasher achieved 71.2 deg C on rinse cycle
Surface sanitizer (bleach water) in bucket at 100 ppm chlorine residual
3 compartment sink with beach available on site
Staff washroom properly stocked with soap/paper towels
Ensure to continually wipe down and sanitize your shelves as they get dusty/sticky
No signs of pests at time of inspection
