Observation: - A few buckets of food items in walk-in cooler and dry storage areas were not covered
- Onions in dry storage room across from washroom were stored directly on the floor
- A few scoops were stored directly in food, with handles touching the food
Corrective Action(s): - Ensure all food is stored covered with saran wrap or tight fitting lids
- Do not store any food on the floor. Onions must be moved from the floor.
- Store scoops such that handles are not in contact with the food.

Observation (CORRECTED DURING INSPECTION): Garbage bags were being used to cover dough.
Corrective Action(s): Discontinue practice. Garbage bags are not food grade material and can chemically contaminate food. Use only food grade material to store or cover food. Staff covered dough with saran wrap at time of inspection.

Observation: Paper towel dispensers were not in use. Hand washing sinks were supplied by a roll of paper towel not in a designated dispenser/holder. Staff stated dispenser in main kitchen is not working properly.
Corrective Action(s): Purchase proper paper towels designed for the dispensers installed in the kitchen and washroom. Paper towel dispensers must be in use. Repair any broken dispensers.

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution was available at 200 ppm in spray bottle. Ensure to purchase more supply of sanitizer before the spray bottle runs out.
- High-temperature dishwasher reached 72C at plate surface level during rinse cycle - good
- All coolers were measured to be at or below 4C
- All freezers were measured to be at or below -18C
- Upstairs area satisfactory
- Dough mixer was dirty but staff stated it had been in use today. **Ensure to clean and sanitizer all parts of dough machine after each use, and never leave it dirty overnight.
