Observation: The wall behind the ice machine has mould on it. Mould could contaminate food or cause allergic reactions in staff.
Corrective Action(s): Wash the wall to remove the mould. Ensure this area is cleaned on a regular basis to remove any mould growth.

Observation: There are broken floor tiles under the chicken pressure cooker. Grease is accumulating under the broken floor tiles and it is diffult to clean. This will attract pests.
Corrective Action(s): Repair all chipped or damaged floor tile under the chicken pressure cooker and deep frying stations, so the floor is smooth, level, sealed, durable, and cleanable.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding units 60C or hotter; thermometers present; and temps recorded 3x a day. Reviewed temp logs.
- Handwashing sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in cloth buckets and spray bottles had strength of 200ppm. Test strips present and recorded.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with raw proteins separate and below RTE foods; and foods stored 6" off the floor on racks, shelves, or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- Manual ware washing being done in 3-compartment sink.
- General sanitation level is good. No signs of pests.
- Valid FoodSafe Level 1 staff present.

COMMENTS
- Reviewed temperature log and observed some temperatures were too warm. No notes were recorded in the log, to confirm action was taken to address the warm temperatures. Review with staff that actions taken to address the problem, should be recorded in the log book.
- Ensure to schedule a professional company to service and clean the exhaust canopies, the service sticker indicates the next service is due on Feb. 14/23.
- There is ice building up on the door frame of the walk-in-freezer as the door does NOT tightly close. It is recommended that a new door latch is installed so it can tightly close the walk-in-freezer door and prevent cold air from exiting.
