Observation: Cleaning is required in the following areas:
> Cook line: grease accumulation on vent hood filters and the floor underneath cooking equipment
> Dishpit: food debris accumulated on the floor near the floor-wall junctions.
Corrective Action(s): Clean and sanitize the premises as per your sanitation plan. Vent hood filters can be removed and should be cleaned on a regular basis in addition to professional vent hood cleaning.

Observation: Prep cooler is not maintaining 4C. Facility is using only the insert level by placing ice in inserts. Bottom storage level is empty.
Corrective Action(s): Service the cooler as soon as possible. Using ice in inserts if a TEMPORARY solution only.

Add more ice to the inserts as soon as they start to melt. Do not fill inserts all the way - fill only what can be used within 1-2 hours. Inserts must be IN ice, not just sitting on top.
