302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwasher is not dispensing sanitizer. Sanitizer measured 0ppm chlorine after several runs and attempts at priming the machine. Repair tech to be called today.
Corrective Action(s):
Until the dishwasher is repaired, you must manually sanitize your equipment. You must:
1) Wash your equipment in the dishwasher.
2) Fill a sink with a 100ppm chlorine solution. Check concentration with provided test strips.
3) Immerse all equipment after they been through the dishwasher in the 100ppm chlorine solution for a minimum of two minutes.
4) Air dry.

Purchase test strips for the dishwasher and maintain a sanitizing log.

Observation: Cold water unavailable at the handwashing station in the front of the facility (by the prep cooler) and at the handwashing station in the back of the facility. Hot water available.
Corrective Action(s): Ensure that cold water is also available at handwashing stations sto promote handwashing and prevent scalding.

Observation: Bags of frozen food stored directly on the floor of the walk-in freezer.
Corrective Action(s): Food must be stored at least 6 inches/15cm off the ground to prevent cross-contamination. This is a repeat violation.

Observation: Back door was open at the time of inspection; no screen door in place.
Corrective Action(s): Staff stated that the screen door is broken and a new one is being made. Until then, the door must stay closed to prevent pest entry. This is a repeat violation.
