Observation (CORRECTED DURING INSPECTION): 1) Dishwasher had no detectable chlorine disinfectant. Feed line was not inserted into the chlorine solution. One tray has been washed and sanitized today.
2) Vegetable slicer was found to have food debris.
Corrective Action(s): 1) Dishwasher is to be tested daily to verify at least 50ppm chlorine disinfectant. Dishwasher was primed and tested at 50ppm to 100ppm. Tray of dishware was washed and sanitized at the time of inspection.
2) Ensure equipment is properly cleaned and sanitized after each use. Items may require additional presoaking to remove dried food debris. Slicer was cleaned and sanitized at the time of inspection.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Bar handwash station did not have any liquid hand soap.
Corrective Action(s): Ensure handwash stations are equipped with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Liquid hand soap was replaced at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Three sanitizer spray bottles were unlabelled at the time of inspection.
Corrective Action(s): Ensure sanitizer spray bottles are properly labelled to prevent accidental mixing or misuse of chemicals. Bottles can either be labelled with stickers or labels can be written directly on the bottles (felt marker).

Comments

-Walk-in cooler was at 3C. Alcohol walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Line coolers were at or below 4C (top and bottom). Prep cooler doors are scheduled to be replaced.
-Hot holding was greater than 60C.
-Chemical dishwasher primed to 50ppm to 100ppm chlorine sanitizer at the time of inspection. Ensure staff are checking the sanitizer concentration daily to verify a chlorine concentration of at least 50ppm.
-Bar glasswasher had a final rinse of 12.5ppm iodine sanitizer (minimum 12,5ppm required for proper sanitizing).
-Kitchen handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottles were tested at 200ppm.
-General food storage practices good at the time of inspection. Foods properly stored off the floor and covered. Raw meats were stored below ready-to-eat foods.
-Frozen foods were thawing under cold running water.
-Facility is serviced by a professional pest control operator. No signs of pests noted at the time of inspection. A few fruit flies were observed by the bar area.
-General sanitation satisfactory. Ensure staff pay attention to area under oven and inside cooler units.
-Washrooms clean and well maintained.
