Cleaning required at the cooler fan covers
Coving in one area is in need of repair - manager stated this has already been identified and is in progress

Slicer cleaning log is in place - timers available at each slicer. Observed some gaps between morning & evening shift. Ensure slicers are broken down and sanitized at least every 4 hours.
- This log captures the complete breakdown. Staff stated that the machines are wiped down with sanitizer throughout the day as well.

Hand washing sinks equipped
Logs maintained for coolers, hot holding and sanitizer

Dishwasher tested greater than 71C at plate surface during rinse cycle
