Observation (CORRECTED DURING INSPECTION): -Ice machine cavity walls have mold.

-Ice cream scooper in stagnant creamy water container
Corrective Action(s): -Discard all ice.

Clean and sanitize ice machine cavity more frequently to prevent the build-up of mold.

-Manually wash ice cream scooper immediately -store ice cream scooper either in ice water (manually washed minimum every 4 hours) or store scooper in the freezer lodged handle-up in the ice cream

Observation (CORRECTED DURING INSPECTION): Blenders and other in-use utensil dishware are only being washed with soap and rinsed at front 2-compartment sink. Owner indicates a full Manual Wash: wash-rinse-sanitize with bleach occurs at the end of the day

No paper towels available at back 3-compartment sink
Corrective Action(s): You MUST be at minimum fully manually washing dishware every 4 hours -inbetween this period you may rinse only
