Observation (CORRECTED DURING INSPECTION): Meatballs in hot holding unit at 50C, these must be kept at 60C or above at all times. Insert that meatballs were in is only half the width of the hot holding unit and the gap left by insert was left open allowing heat to escape. **This is a repeat infraction and was noted on the inspection report from last inspection**
Corrective Action(s): Meatballs reheated during inspection. Close/cover the gap to hold in the heat to help keep the meatballs 60C or higher.
If this continues, the next violation may result in a ticket of $345 each infraction.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Dirty/used soup ladle stored in stagnant water that was at room temperature. The water can allow bacterial growth and can contaminate food if ladle is used without being properly washed first. **This is a repeat infraction and was noted on the inspection report from last inspection** Soup spoon and water removed from use during inspection.
Corrective Action(s): Discontinue practice of storing used soup spoon in stagnant water. Alternatively the spoon may safely stored in water if kept above 60C or put spoon/ladle through the wash between use. If this practice continues, a fine of $230 for each infraction.

Observation: The only staff on site during inspection does not have FoodSafe certification. **This is a repeat infraction and was noted on the inspection report from last inspection** However staff showed proof of enrollment in FoodSafe course on November 29th, 2022.
Corrective Action(s): After course is completed, bring in and keep temporary certificate on site to demonstrate compliance until actual certificate arrives. Ensure that at least one staff member is FoodSafe certified on site during operation. Continued failure to comply with this after Nov 29, 2022 may result in a ticket of $230 each infraction.
