Observation (CORRECTED DURING INSPECTION): 1) High temperature dishwasher is measured at 65.6 to 68.9C after 6 tries. See thermolabel. Dishwasher unit is older where hot water and detergent are manually added. 2) Bleach sanitizer in the kitchen was at 0ppm.
Corrective Action(s): 1) Restaurant is on single use service. See correction order. 2) You must mix 100ppm bleach sanitizer so it is readily available.

Observation: Walk-in freezer was measured at -5.7C. Door seal is broken.

Observation: Mice droppings noted under bar in the corner. Fruit flies noted in the bar area.
Corrective Action(s): Please remove droppings and properly clean the bar to deter fruit flies from breeding.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Sanitation needs to improve the in the following areas: corner of walk-in cooler (mould), bar (counters and floor), office and recycling room (clutter noted), upright domestic fridge, and prep area where meat slicer is stored.
Corrective Action(s): Please declutter and thoroughly clean and sanitzie all noted areas.

Observation: Several surfaces were no longer smooth, non absorbent and easily cleanable. These surfaces include, undercounter cooler shelves (exposed wood), floor tiles of walk-in cooler and walk-in freezer, wall tiles around dishwashing area.
Corrective Action(s): These surfaces will need to be repaired or replaced.

Domestic fridge/freezer: 4C and -18C
Bar coolers: 9C
*no cold potentially hazardous food allowed in the bar coolers still as it cannot maintain 4C or colder
Ice machine maintained, scoops are hung on the side
No food in hot holding station, only rice on stove at 82C

Note: three door upright cooler and small white chest freezer in main kitchen, two door underounter cooler by coffee station and bar glasswasher are not being used.
There is also no grease trap onsite.
