Observation (CORRECTED DURING INSPECTION): High temperature dishwasher registered 69C at the plate level. Chef stated the temperature switch on the booster was adjusted to lower the temperature previously.
Corrective Action(s): Chef adjusted the temperature switch on the booster for the high temperature dishwasher. 76C was registered from the high temperature dishwasher at the plate level.

Comments

Routine inspection:
- Coolers (walk-in, under the counter, display) maintained at 4C or less.
- Walk-in freezer maintained at -18C.
- Hot food hot held at above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quats sanitizer available from spray bottle and from the dispenser.
- Ice machine maintained in a sanitary condition.
- Food products stored off the ground and organized.
- Food covered and protected from contamination.
- Utensils and food equipment maintained in a sanitary condition.
- Chef stated temperatures were being monitored by students on a daily basis. Temperature records were not available.
- General sanitation excellent.
- No pest activities observed at the time of inspection.
