Observation (CORRECTED DURING INSPECTION): Upon arrival of EHO cooler unit was operating at 14-20 degrees Celsius.
Food items found to be at 14-20 degrees Celsius (opened nondairy milks)
CORRECTED DURING INSPECTION - cooler unit was turned on. Milk items were discarded at time of inspection.

Corrective Action(s): Cooler unit was switched "OFF" accidentally.
Make note and alert staff to issue.

Observation (CORRECTED DURING INSPECTION): One dish in warmer unit observed to be at temperatures below 60 degrees Celsius.
CORRECTED DURING INSPECTION - item reheated.

Corrective Action(s): The warmer unit is not a water bath insert hot holding unit but a single heated bottom type. These types of units do not hold heat as well as water insert types in which the hot water envelopes all sides of insert. Monitor temperatures of hot holding unit.
EHO will be monitoring unit at each inspection. Unit is to be maintained at temperatures of 60 degrees Celsius or more. Unit will need to be turned up if unit is not capable of maintaining 60 degrees Celsius in food.

Observation (CORRECTED DURING INSPECTION): Coffee station is wiped with water.
EHO did observe staff not soaking utensils properly for one minute fully submerged in sink. EHO observed staff using sanitizer pail to soak for sanitizer solution.
CORRECTED DURING INSPECTION - EHO demonstrated and instructed proper ware washing which includes 1 minute soak according to manufacturer's directions.

Corrective Action(s): Coffee station is to be wiped with 200ppm QUAT or equivalent sanitizer solution. This sanitizer solution is to be used instead of water and replaced when dirty throughout the day.
Ensure staff are properly taught to wash-rinse and sanitize for 1 minute soak fully submerged (according to manufacturer's directions)

Observation: Gap at swing door behind freezer units that allow rodents to enter facility.
This has been discussed at each inspection.

NOTE:- Facility has had the swing door pest proofed by constructing a barrier and other points of entry filled with steel wool
