Observation (CORRECTED DURING INSPECTION): 1. Six approximately 20 kg bags and two 10 kg bags of dry food product were observed with what appeared to be several rodent chew holes. Several rodent droppings observed in areas where bags are stored. Two paper bags observed with mold on exterior.
2. Staff member dropped a slice of raw meat onto floor, then proceeded to rinse the meat for reuse.
Corrective Action(s): 1. Discarded. Ensure food that is contaminated or unfit for human consumption is immediately discarded. Ensure all bagged dry food (open or closed) is stored in pest proof containers with fitted lids.
2. Discarded. Immediately discontinue this practice.

Observation (CORRECTED DURING INSPECTION): Bean sprouts stored at ambient temperature measured 14 degrees C. No time tracking. No ice bath in use. Additionally, a bag of sprouts was observed at room temperature (bagged sprouts also at 14 degrees C).
Corrective Action(s): Bean sprouts placed into ice bath. Bag of sprouts placed into cooler at 4 degrees C or less. Ensure potentially hazardous foods such as sprouts are maintained at 4 degrees C or less at all times.

Observation (CORRECTED DURING INSPECTION): Back area hand sink obstructed (large jug of vinegar stored in sink).
Corrective Action(s): Obstructing item removed. Ensure hand sinks remain unobstructed at all times to facilitate proper hand washing.

Observation (CORRECTED DURING INSPECTION): 1. Griddle and fryer cleaner stored next to paper bag of dry food product.
2. Two open cans with food product stored in cooler.
3. Open container of chilli oil stored on wire rack under raw meat storage area. Note: No evidence of leakage.
Corrective Action(s): 1. Bag discarded (rodent chew marks also present). Ensure cleaning and sanitizing chemicals are stored separately from food.
2. Ensure that once cans are opened, canned food is transferred to another food grade container with a lid or covering. Cans may potentially begin to rust once opened.
3. Ensure raw meat and eggs are not stored above ready-to-eat foods in case of leakage onto food below.

Observation: Rodent droppings observed in the following areas:
1. Dry food storage (severe).
2. Back area equipment and utensil storage (droppings observed on/in equipment and utensils).
3. Along floor-to-wall junctions, under equipment.
4. Front area (open cabinets).
Corrective Action(s): Ensure all rodent droppings are properly cleaned and affected areas are disinfected. It was discussed to use a 1:10 bleach water solution. All equipment and utensils to be re-washed and sanitized through the dishwasher. In addition:
- Contact pest control to schedule reservice once cleaning and sanitizing is complete.
- Identify and seal any potential pest entry points.

Low temperature dishwasher measured 50 ppm chlorine in the rinse residual at the utensil surface (required: minimum 50 ppm chlorine).
Ice machine in clean condition. Scoops stored outside of machine.
Bleach water sanitizer measured 100 to 200 ppm chlorine (in buckets and in spray bottles).
