Observation: -Observed dishware being only washed and rinse NO Sanitizing step ??- slicer machine was stored in the second sink- NO ONION RING preparation in this facility
-Wiping rags were in an empty container no Sanitizer -repeated violation violation ticket

Corrective Action(s): All 4 steps of manual dishwashing must be done (Wash-Rinse-Sanitze-Air Dry- instructed staff to soak all dishware in sanitizer at time of visit.
-Remove the slicer from this facility- all food perp must be done in other facility as per correction order and agreement
-Clean wiping rags must be soaked in sanitizer at all time (use timer to change the sanitizer every 2 hrs)

Comments

Facility got temporary closed due to no FS trained staff- manager came before the end of inspection..
-Cooler temperatures are good (< 4C)
- Freezer temperatures are good (< -18C)
- Hot holding temperatures are good (> 60C)
- Staff hygiene is ok
* Oil in Deep fryer were over due totally black, manager tested and test showed the oil totally burnt and brown compare to the the sample- Oil must be changed when the bottom is not visible

Most of the noted issues are repeated, violation tickets as stated will be issued. The owner/or operational manager to meet the inspector at the Fraserhealth office (port moody) Friday Jan 12 at 9:30 am. Address is: #300-205- Newport drive port moody.

Please send me an action plan to address all noted issues and the gradual upgrading to the store by Jan 11/2018.
