-Prep table inserts at 3°C. Below prep at 1°C.
-one-door under counter cooler at 3°C.
-two-door under counter at 4°C.
-display cooler at 3°C.
-cream coolers at less than 4°C.
-freezer at -18°C.
-hot holding units (soup inserts and pull out trays) above 60°C. (68°C to 74°C)
-temperature records available and up to date.

-high temperature dishwasher measured 73°C at utensil surface during final rinse.
-3-compartment sink satisfactory. All sink plugs available and quats solution measured at 200ppm.
-sanitizer available in labelled buckets measured at 200ppm.
-all hand washing sinks (including staff washroom sink) & supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-no evidence of pests at time of inspection. Pests control records available.

Note: Door seal on two-door under counter cooler is starting to warp/crack. Please monitor condition of door seals and clean these areas regularly as food debris may accumulate and coolers may not be able to maintain temperatures of 4°C or less.
