Observation (CORRECTED DURING INSPECTION): No bleach sanitizer available on-site and staff member mixed bleach, water, and soap to clean and sanitize.
Corrective Action(s): Do not mix bleach and soap together. Bleach must be at 100ppm to 200ppm to properly sanitize food contact surfaces. Bleach, soap, and water was discarded at the time of inspection and bleach sanitizing solution of 100ppm was prepared at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Slicer and dicer were found to have food debris after cleaning.

Comments

-Prep cooler was at 4C (top and bottom).
-Front display cooler was on defrost mode at the time of inspection.
-Under counter bar cooler was at 4C.
-Front display cooler was at 4C.
-Chest freezer was at -18C.
-Cooked food items (meatballs) were properly cooled and were at 4C at the time of inspection.
-Cleaning and sanitizing carried out in the 2-compartment sink. Bleach and sink plug available.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Foods stored off the ground and covered. Did not observe foods stored in opened metal cans at the time of inspection.
-No signs of pests noted at the time of inspection.
