Comments

- Walk-in cooler maintenance was being done at time of inspection and was turned off during maintenance (about 45 minutes altogether). Temperature of cold-held foods were at 4C or colder - OK. Ambient temperature reached below 4C by the end of the inspection.
- Walk-in freezer measured at -22C
- All prep coolers were measured at 4C or colder
- All hot held food items were measured at 60C or hotter
- Accurate thermometers were available. Temperature records well maintained and up to date.
- Quat sanitizer solution measured at 200 ppm in sanitizer buckets and from dispenser. Solution is changed every 3 hours according to staff. Test strips available for use.
- Hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels
- Three-compartment sink and food prep sink maintained in sanitary conditions. Sink plugs available.
- Food storage practices were satisfactory; all food stored off the floor and properly covered. Dry storage areas satisfactory.
- General sanitation satisfactory. All equipment maintained in sanitary conditions
- No signs of pest activity noted at time of inspection.
- Foodsafe certified staff on-site.

Note: Food prep sink has been relocated and is now next to hand washing sink. OK. Ensure to obtain health approval prior to making any changes in the future.
