Observation (CORRECTED DURING INSPECTION): Observed a large batch of raw lamb blocks (approximately 5cm x 5cm cubes) under water in a sink. The meats were not in any packaging materials. Temperature of water was at 30C, internal temperature of meats were measured at 0C and the surface measured at ~15C. No time tracking in place. Operator cited that the meat was undergoing washing/rinsing step to remove surface contaminants (e.g., blood). Confirmed with T&T food safety specialist on site that no such procedure is in the Food Safety Plan. Operator discarded ~120lbs of raw lamb blocks as per their Food Safety Plan.

Observation (CORRECTED DURING INSPECTION): (Repeated violation) The following Ready-To-Eat foods were discarded due to time and temperature abuse:
- 2 x BBQ roast pork belly
- 2 x Honey pork back ribs
- 1 x Marinated duck - half
- 2 x BBQ pork
Internal temperature ranged from 45-50C. According to the time stamp on products' label, these items were packed more than 2 hours ago. Further repeated violation may result in a progressive enforcement actions.

Observation (CORRECTED DURING INSPECTION): Observed a box of green lettuce stored underneath the box of raw chicken in the walk in cooler. No sign of contamination (e.g., dripped liquid from the box above) observed at this time. The boxes were relocated at this time.

Hand washing stations fully equipped with hot and cold running water, liquid soap and paper towels.
General sanitation is adequate.
Coolers measured at 4C or less.
Freezers measured at -18C or less.
Hot holding measured at 60C or higher (see the violation section for an exception).
No sign of recent pest activity noted at this time.
QUATS sanitizer measured at 200 ppm as per test strips.
