- All handwash stations had soap, paper towel, hot and cold running water.
- All coolers 4C or less (sushi display case, prep cooler, walk in, sliding two door...etc)
- All freezers -18C or less
- All hot holding higher than 60C (teryaki chicken, miso soup, rice...etc)
- Lights in food preparation areas had covers.
- Ice machine appeared clean with the scoop for the ice stored outside of the ice in a separate container.
- No obvious signs of pest activity noted at time of inspection.
- Chlorine sanitizer 100ppm in containers with cloths submerged (one in kitchen and one in sushi prep area)
- High temperature dishwasher achieved 71C (with thermolabel).
- 1 pregnancy & alcohol warning sign provided - to be posted in men's washroom. Female washroom already had appropriate signage.
- Reminded operator of foodsafe level 1 recertification requirements. Information pamphlet provided. |
