Deli:
Handsinks were accessible and supplied with liquid soap, hot and cold running water, and single-use paper towels.
Staff were observed properly washing their hands.
Walk-in-cooler (containing deli products) was at 4 degrees C or less. Food products were covered and stored off the floor. Light bulbs were encased in shatter-resistant covers. Fan covers appeared clean.
Other display refrigeration units and under-the-counter cooler were at 4 degrees C or less.
Upright freezer temperature was satisfactory.
Walk-in-freezer was at -18 degrees C or less. Light bulbs were encased in shatter-resistant covers. Fan covers appeared clean.
Refrigeration temperatures are monitored and alarmed.
Rotisserie chicken is cooked to an internal temperature of at least 85 degrees C according to the Store Manager (minimal required: 82 degrees C internal temperature).
Cooking temperature records were being maintained.
Cooked rotisserie chicken was observed pre-packaged and hot-held in a retail area at 60 degrees C or hotter. Hot-holding unit was equipped with thermometers.
Ventilation hood was in a clean condition. Light bulbs were encased in shatter-resistant covers.
Cleaning frequency for deli slicers is within every 4 hours, sometimes immediately after each use, and after final use each day according to the Store Manager.
Deli slicers were observed to be in a clean condition.
200 ppm QUATS sanitizer was available in labelled spray bottles and from the dispenser of the third compartment sink unit in the deli department.
3-compartment sink unit was supplied with hot and cold running water and it was equipped with three built-in sink plugs.
No signs of recent pest activity was evident at the time of inspection.
Pest control program was in place via Rentokil on a monthly basis.

Walk-in-cooler containing raw chicken:
-Walk-in-cooler temperature was at 4 degrees C or less.
-Raw chicken is received refrigerated at 4 degrees C or less and stored inside this walk-in-cooler.
-Raw chicken was stored in a packaged condition off the floor inside this walk-in-cooler.
-Handsink inside this walk-in-cooler was supplied with liquid soap, hot and cold running water, and single-use paper towels.
-3-compartment sink inside this walk-in-cooler was supplied with hot and cold running water, and equipped with three functional sink plugs.
-200 ppm QUATS sanitizer was available from the dispenser at the third compartment sink.
