Observation (CORRECTED DURING INSPECTION): Quats sanitizer concentration measured at >>>400ppm.
Corrective Action(s): Water was added and concentration was reduced to 200ppm (corrected). Provide test strips to monitor concentration of quats sanitizer daily and dilute as per directions on chemical bottle label.

Observation: Evidence of mice noted in monitoring trap by dishwasher. Premises is not free of pests.
Corrective Action(s): Pest control program must be followed as previously discussed.
- Keep all food in pest proof bins, including loose potatoes.
- Clean premises. Repair any water leaks.
- Seal holes.
- Monitor for pests and follow advice of licenced pest control expert.

Observation: Mouse droppings noted on floor.
Corrective Action(s): Improve cleaning and follow a routine cleaning schedule. Clean in hard to reach areas. Repeated violation.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Quats sanitizer in spray bottle is at 0ppm (using test strip). Quats automatically dispensed into bucket at 0ppm and chemical container is empty (no chemical in plastic line).
Correction: New chemical container was provided during inspection and after line cleared of air gaps, 100ppm quats detected with test strips. Immediately check directions on chemical bottle label and adjust concentration if required (such as 200ppm if on label).
Provide test strips to verify the concentration daily and instruct staff on how to make sure the concentration is as required. This is a repeat violation.
