Observation: Food in upright display cooler in kitchen measured at 9 degree C. Coleslaw, buns, and salad sauces stored in this unit. Operator moved food from the unit to walk in cooler at the time of the inspection. Display cooler must maintain food at or below 4 degree C.
Corrective Action(s):
Repair the cooler so that can maintain food temperature at or below 4 degree C.
Do not store perishables in this cooler until is repaired.

Hand washing station supplied with hot, cold running water, liquid soap and paper towels.
Walk in cooler measured at 4 degree C or colder. Food stored properly and good separation noted. Upright freezer measured at or below -18C.
Chest freezer measured at or below -18 C. Note: Ensure to separate raw food from vegetables and other ready to eat foods. Do not stack raw food at top of ready to eat food.
200 ppm chlorine solution available as sanitizer in spray bottles and sani buckets in back. Obtain chlorine test strips to ensure adequate bleach residue in water.

General sanitation is overall good.
Back door equipped with screen. No sign of pest activity noted at this date.
Kitchen is well lit.
Fryer hood noted clean and maintained.
Floors noted clean.
