Observation:
1) Raw meat and raw eggs stored on top of ready to eat foods and vegetables.
2) Scoops stored directly in dried ingredients.

Both are repeat infractions.
Corrective Action(s):
1) Raw meat and raw eggs must be stored below and away from ready to eat foods
2) Do not store scoops in dried ingredients to prevent cross-contamination.

Observation:
Rodent droppings observed throughout the facility:
- in supply closet
- in delivery areas
- by the sugar underneath the stairs
- in electrical room
Corrective Action(s):
- Clean and sanitize areas where rodents are found with a 1:10 bleach solution (1 cup bleach in 10 cups water)
- All rodent damaged foods must be discarded
- Store all foods in pest proof containers
- Ensure that suggestions from professional pest control are followed
- Email pest report to the undersigned by August 28, 2019

General:
- handwashing stations stocked with soap, paper towel and hot and cold running water
- dishwasher reached 72C at the final rinse cycle; temperature log maintained
- meat slicer in sanitary condition
- sanitizer measured >200ppm chlorine - use only 1tsp of bleach for every 1L of water

Temperatures:
- walk-in cooler: 3C
- walk-in freezer 1: -20C
- walk-in freezer 2: -21C
- chest freezer near shipping doors: -27C
- chest freezer in kitchen area: -15C
- chest freezer nearer to staff area: -24C
- temperature logs are missing for some coolers/freezers - begin temp logs again (record 2x daily)
