Observation (CORRECTED DURING INSPECTION): Operator is not sanitizing countertops. Wiping cloths are stored dry on top of the counters.
Corrective Action(s): All wiping cloths must be stored in a sanitizer solution (e.g. 1/2 tsp bleach per L of water). Change the solution every 2 hours or as needed.

General Comments:
Storage locker on 2nd floor: chest freezer temperature is -18 degC; Upright freezer temperature is -20 degC; fridge is 4 degC
All coolers are at or below 4degC; freezers were below -18 degC but had non-PHF's stored inside.
One of the display coolers is not refrigerated. Only non-PHF's stored in this cooler.
Operator has FS Level 1 certification (Expiry: July 7, 2023). ENSURE STAFF WORKING ALONE ARE FS LEVEL 1 CERTIFIED.
Dishwasher rinse temperature was 73 degC at plate level.
SOUPS MUST BE REHEATED IN THE MICROWAVE TO 74 DEGC FIRST BEFORE BEING PLACED IN THE PREHEATED WARMER AS DISCUSSED.
