Cooling drawer in third compartment (as discussed) still struggling with temperature. Ham at 14 C. Discarded ham.
Corrective Action(s): Juggle food storage locations as discussed. Move high risk foods to lower drawers and out of unit that is struggling. Less risky foods can be kept closer to the heat. Continue to use ice to help keep foods below 4 C. **Make sure drawers are closed at all times when not in use.

Observation: Cold food inserts, and a set of drawers under grill along cook line warm. Measured between 7 and 11 C. Remove food from identified units if recovery not within 30 minutes.
Additionally, locate higher risk foods (when practical) away from heat sources and supplement with ice inserts to help key foods maintain 4 C or less through rush periods.
Correction: Monitor for temperatures and service unit as necessary. Possibly working through defrost cycle.

Comments

Reviewed cooler drawers below cook line. Smaller volumes of food inside and larger bottom drawer supplemented with ice. Third drawer still not keeping food (sliced ham, cheese and roast turkey slices) below 4 C. Discussed with staff. Other drawers in this line are good and keeping food below 4 C. Have service technician look at unit again. Possibly the drawers left open also, as the further back foods better measured at better temperature.

Fly population much less in around dish pit. Good. Thanks.
