Observation (CORRECTED DURING INSPECTION): Observed 12 Qts container of black beans that is closed to measure at 55.7C internal temperature stored at room temeperature. Operator informed it was made 2 hours ago. Operator informed that it will be put into the cooler in the evening (roughly 3 hours) once it is cooled to room temperature.
Corrective Action(s): Cool aforementioned item under ice bath, in shallow containers, or use ice wand. All potentially hazardous foods must be cooled from 60C to 20C within 2 hours and 20C to 4C within 4 hours.

Observation (CORRECTED DURING INSPECTION): Rice in the rice cooker measured at 54.1C internal temperature. Operator informed that it was made 3 hours ago.
Corrective Action(s): Discard aforementioned items. Ensure all hot-held potentially hazardous foods must be stored at 60C or higher.

Observation (CORRECTED DURING INSPECTION): QUATs sanitizer buckets measured at 100ppm. Operator informed that they change it every 2 hours.
Corrective Action(s): Re-make QUATs sanitizer buckets to measure at 200ppm. Change QUAT sanitizer buckets in the front and back kitchen area more often when the solution is soiled to ensure proper concentration of QUATs.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
3-compartment sink sanitizing at 200 ppm QUATs.
Prep cooler and stand-up coolers measured at 4C or lower. Stand-up freezer at back of house measured at -18C. Hot-holding units on the cookline measured at 60C or higher.
Fountain drink station nozzles in sanitary condition.
No signs of pests observed.

Overall, facility is well organized.
