-Copy of corporate food safety and sanitation plan on site
-operator is foodsafe trained.

-All coolers 4 deg. C or less. (walk in, undercounter, prep. etc)
-freezers -14 deg. C to -18 deg. C
-Hot holding higher than 60 deg. C (mushrooms... etc)
-Good general sanitation. No obvious sign of pest activity noted.
-High temperature dish washer achieved 71 deg. C (with thermolabel)
-Ice machine appeared clean with scoop stored in holder

Ensure cheese is maintained at 4 deg. C or less. Ensure turn over of 2 hrs if unable to maintain 4 deg. C or less.
